Nothing says a sunny afternoon in Puerto Rico like the rhythmic crrr-shhh of the wooden ice shaver. More than just a snow cone, the Piragua is a hand-carved masterpiece of crunchy ice and sweet, tropical syrups. From the streets of San Juan to the local plazas, this pyramid-shaped treat is a cooling tradition that has brought smiles to generations of Puerto Ricans.
Ingredients:
- A block of ice (or a bag of ice cubes if using a blender/crusher)
- Flavored Syrups (Almíbares): Parcha (Passion Fruit), Tamarindo, Coco, Frambuesa (Raspberry) or Ajonjolí (Sesame).
- Optional: Sweetened condensed milk (to drizzle on top for a «Creamy Piragua»).
Methods:
- Prepare the Ice: If you have a traditional cepillo (shaved ice tool), shave the ice block into fine, crunchy flakes. If not, pulse ice cubes in a high-speed blender until they reach a snow-like consistency.
- Shape it: Firmly pack the shaved ice into a cup or a cone-shaped mold, pressing down to create that iconic pyramid top.
- Add the Flavor: Generously pour your choice of fruit syrup over the ice.
- Don’t be shy, let it soak all the way to the bottom!
- Serve: Hand it over immediately with a straw and a spoon before the tropical sun wins the race.
