CHEF COQUÍ’S TIMING

Polvorones 🍪✨

💡 Don’t overmix the dough, or they won’t have that classic crumbly texture! 🔊

If there is one cookie that defines a Puerto Rican celebration, it’s the Polvorón. Known for their incredible «melt-in-your-mouth» texture, these traditional shortbread cookies are a staple at every birthday party, baby shower, and holiday gathering. The name comes from the word polvo (powder), which perfectly describes how they crumble delicately with every bite.

Whether they are topped with a bright piece of guava paste, colorful sprinkles, or a classic thumbprint of sugar, Polvorones are the ultimate comfort snack. Pair them with a hot cup of café con leche, and you’ll understand why these simple, buttery treats have been a favorite on the island for generations.

Ingredients:

  • 1 bar (½ cup) Unsalted butter (softened)
  • ½ cup Vegetable shortening (like Crisco)
  • ½ cup White sugar
  • 1 tsp Vanilla extract
  • 2 cups All-purpose flour
  • ½ tsp Baking powder
  • A pinch of salt
  • For the center: Guava paste (guayaba), sprinkles, or a chocolate kiss.

Methods:

  • Cream the Fats: In a large bowl, cream together the softened butter and shortening until smooth. Add the sugar and vanilla, and beat until fluffy.
  • Add Dry Ingredients: Gradually stir in the flour, baking powder, and salt. Mix until a soft dough forms. (Don’t overmix, or they won’t be as crumbly!)
  • Chill (Optional but Recommended): Wrap the dough and refrigerate for 20 minutes to make it easier to handle.
  • Shape: Preheat your oven to 350°F. Roll the dough into small balls (about 1 inch) and place them on a parchment-lined baking sheet.
  • The Thumbprint: Use your thumb or the back of a small spoon to make a small indentation in the center of each ball. Fill the center with a small piece of guava paste or your choice of topping.
  • Bake: Bake for 15–18 minutes. You want them to stay pale on top but be slightly golden on the bottom.
  • Cool: Let them cool completely on the tray before moving them—they are very delicate while warm!
