These ‘Coconut Kisses’ are a beloved island classic—simple to make, yet incredibly satisfying. With their golden-brown exterior and soft, sweet center, they are the perfect little companion for your afternoon cup of coffee.
Ingredients:
- 2 cups sweetened shredded coconut
- ½ cup All-purpose flour
- ½ cup Brown sugar (packed)
- ¼ tsp Salt
- 2 Egg yolks (at room temperature)
- 2 tbsp Butter (melted and cooled)
- 1 tsp Vanilla extract
- A pinch of ground cinnamon or a drizzle of melted chocolate for the top. (optional)
Methods:
- Preheat and Prepare: Preheat your oven to 350°F. Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
- Mix Dry Ingredients: In a medium bowl, combine the shredded coconut, flour, brown sugar, and salt. Use a fork to break up any clumps of sugar.
- Add Wet Ingredients: Stir in the egg yolks, melted butter, and vanilla extract. Mix until the coconut is well-coated and the mixture holds together when pressed.
