⏳ Prep: 5 mins | 🔥 Cook: 6 mins
🍯 Note: No salt needed—let the sugar caramelize!
Amarillitos (sweet plantains) can be served as both an appetizer and a side dish. They are a true family favorite for my mother, father, and grandfather. If you have extra ripe plantains, you can even use them to make pastelón, a delicious Puerto Rican plantain lasagna!
Ingredients:
- yellow Plantain(s)
- oil
Methods:
- Prep the Plantains: Use very ripe plantains (the skin should be yellow with lots of black spots). Peel them and cut them at an angle into ½ inch thick oval slices.
- Heat the Oil: Fill a pan with enough oil to cover the bottom. Heat over medium heat.
- The Fry: Carefully place the slices in the pan. Fry for 2–3 minutes per side until they are deep golden brown and the natural sugars have caramelized.
- Drain: Remove and place on a paper towel. These are naturally sweet, so no salt is needed!
