Chef Pongo’s Tahu Isi:

⌛ Prep: 25 mins

🔥 Cook: 15 mins

💡 Use ice-cold water for the batter; the temperature shock against the hot oil is what creates that signature «shattered-glass» crunch! 🔊

f there’s a king of the Gorengan cart, it’s Tahu Isi. We take extra-firm tofu, hollow it out, and stuff it to the brim with a savory explosion of crunchy vegetables. It’s crispy on the outside, steaming soft on the inside, and best enjoyed with a bold bite of fresh chili.   Ingredients:
  • 10-12 pieces of Tahu Pong (hollow fried tofu) or firm tofu fried until golden.
  • Filling: Shredded cabbage, carrots, and bean sprouts.
  • Aromatics: Minced garlic, shallots, and sliced green onions.
  • Batter: A mix of all-purpose flour, rice flour (for crunch), turmeric, and ice-cold water.
  Methods:
  • Sauté: Cook the garlic and shallots, then toss in the veggies until just wilted. Let it cool.
  • Stuff: Sliced a small slit in the tofu and pack the veggie mixture inside.
  • Dip: Dunk the stuffed tofu into your cold batter.
  • Fry: Deep fry until the exterior reaches that «shattered-glass» level of crispiness.
