Chef Pongo’s Martabak:

⌛ Prep: 1 hour (resting)

🔥 Cook: 15 mins

💡 Only add your baking soda right before the batter hits the pan. This ensures the «beehive» holes form perfectly for all that butter to soak into! 🐝

Often called Terang Bulan or Indonesian Sweet Pancake, this thick, buttery, and «holey» pancake is a legendary Indonesian street food. It is traditionally folded over a decadent filling of chocolate, cheese, peanuts, and condensed milk.   Ingredients:   Batter:
  • 250g All-purpose flour
  • 350ml Milk (or water)
  • 1 Egg
  • 50g Sugar
  • ½ tsp Baking soda
  • ½ tsp Yeast
  • Pinch of salt.
Filling:
  • Salted butter
  • Condensed milk
  • Chocolate sprinkles (Meisjes)
  • Crushed peanuts
  • Grated cheddar cheese.
  Methods:
  • Rest Batter: Whisk flour, sugar, salt, yeast, egg, and milk until smooth. Let the batter rest for at least 1 hour.
  • Activate: Just before cooking, stir in the baking soda dissolved in a teaspoon of water.
  • Cook: Pour the batter into a preheated, greased heavy-bottomed pan. Swirl to create a crispy rim.
  • Bubbles: Once bubbles form on the surface, sprinkle with sugar and cover until the top is set.
  • Assemble: Remove from the pan, slather generously with butter, add your choice of toppings, and condensed milk. Fold in half and slice.
