Chef Pongo’s Kolak:

⌛ Sediakan: 15 minit

🔥 Masak: 20 minit

💡 Jangan biarkan santan mendidih terlalu kuat! Gunakan api kecil dan kacau perlahan-lahan supaya santan tidak «pecah minyak,» bagi memastikan kuah kolak anda kekal cantik dan berkrim. 🥥

Compote in Coconut Milk, a staple during the month of Ramadan, Kolak is a warm dessert soup. It typically features sweet potatoes, bananas, and sometimes cassava or jackfruit, all simmered in a rich, creamy coconut and palm sugar broth.   Ingredient:
    • 250g Sweet potatoes (cubed)
    • 3 Bananas (sliced)
    • 500ml Water
    • 200ml Thick coconut milk.
    • 150g Palm sugar
    • 2 Pandan leaves
    • pinch of salt.
  Method:
    • Boil: Cook sweet potatoes in water with pandan leaves until tender.
    • Sweeten: Add palm sugar and salt, stirring until dissolved.
    • Simmer: Add the bananas and coconut milk. Simmer gently (do not boil hard, or the coconut milk will separate) for 5 minutes.
    • Serve: Enjoy warm or at room temperature.
