Chef Pongo’s Klepon:

⌛ Prep: 20 mins

🔥 Cook: 5 mins

💡 Don’t roll the dough too thin! If the walls are too weak, the palm sugar will leak out during boiling. Make sure there are no cracks before they hit the water. 💥

Klepon is one of Indonesia’s most beloved jajanan pasar (market snacks). These vibrant green, chewy glutinous rice balls are infused with fragrant pandan, rolled in fresh grated coconut, and feature a surprising molten palm sugar center that «bursts» when you take a bite.   Ingredients»
  • 200g Glutinous rice flour, 150ml Warm water (mixed with pandan paste or juice), pinch of salt.
  • 100g Palm sugar (Gula Jawa), finely chopped.
  • 100g Grated coconut (steamed with a pinch of salt)
  Methods:
  • Prepare Coating: Steam the grated coconut with salt for 10 minutes to keep it fresh; set aside to cool.
  • Make Dough: Mix rice flour and salt. Gradually add the warm pandan water, kneading until the dough is smooth and pliable.
  • Shape: Take a small piece of dough, flatten it, and place a teaspoon of palm sugar in the center. Roll into a smooth ball, ensuring there are no cracks.
  • Boil: Drop the balls into boiling water. Once they float to the surface, let them cook for 1 more minute to ensure the sugar has melted.
  • Finish: Remove with a slotted spoon and immediately roll in the steamed coconut.
