Pandan Crepes with Coconut, Dadar Gulung, literally translates to «rolled pancake.» These bright green crepes get their color from pandan leaves and are stuffed with Unti Kelapa—a sweet, juicy filling of grated coconut cooked in palm sugar.   Ingredients:  
    • 150g Flour
    • 1 Egg
    • 300ml Coconut milk
    • Pandan extract
    • pinch of salt.
    • 150g Grated coconut
    • 100g Palm sugar
    • 50ml Water
    • 1 Pandan leaf
  Methods:  
    • Filling: Simmer water, palm sugar, and pandan leaf until the sugar melts. Add the grated coconut and cook until the liquid is absorbed.
    • Crepe: Whisk crepe ingredients into a smooth, thin batter.
    • Cook: Pour a ladle of batter into a non-stick pan, swirling to make a thin pancake. Cook until the edges lift; do not flip.
    • Roll: Place a spoonful of filling on a crepe, fold in the sides, and roll it up like a spring roll.
