If you love a sharp, tingly heat, Sambal Rica-Rica is for you. This Manado specialty is famous for its «zing,» thanks to a generous amount of fresh ginger and lime leaves. It’s a high-energy sambal designed to wake up your taste buds and cut through the richness of fried or grilled meats.   What it tastes like? High-energy heat with a sharp, gingery kick. It is very citrus-forward and leaves a tingly, fresh sensation on the palate.     Ingredients:  
  • Red chilies
  • Ginger
  • Sallots
  • Plenty of lime juice
  • Lime leaves.
    Methods:  
  • Grind red chilies, shallots, and a thumb-sized piece of ginger into a paste.
  • Sauté the paste with bruised lemongrass and plenty of lime leaves.
  • Finish with a generous squeeze of fresh lime juice and salt
