CHEF COQUÍ’S TIMING
Limber de Frambuesa 🍧🍓
⏳ Prep: 10 mins
🧊 Freeze: 8 hrs
💡 If using fresh raspberries, make sure to strain the puree through a fine-mesh sieve to remove the seeds for a smoother bite! 🔊
-
- ½ jar (5 oz) Maraschino Cherries (with syrup)
-
- 1 cup Cherry juice (or nectar)
-
- 1 cup Raspberry juice (or fresh raspberries blended and strained)
-
- 1 can (12 oz) Evaporated Milk
-
- 1 can (14 oz) Sweetened Condensed Milk
-
- 1 tsp Vanilla Extract
-
- A drop of red food coloring (optional, to make that «Pitufo-style» vibrant red)
-
- Prep the Fruit: If you are using fresh raspberries, blend them and strain the puree through a fine-mesh sieve to remove the seeds.
-
- Mix Ingredients: In a blender or large pitcher, combine the maraschino cherries (with their syrup), cherry juice, raspberry juice, evaporated milk, condensed milk, and vanilla extract.
-
- Color (Optional): Add a drop of red food coloring if you want to achieve a more vibrant, «electric» red color.
-
- Blend & Skim: Process the mixture until smooth. Let it sit for a minute and use a spoon to skim off any foam from the top to ensure the limber is solid rather than airy.
-
- Pour & Freeze: Pour the mixture into your plastic cups and freeze for 6 to 8 hours (or overnight) until they are rock-solid.
