CHEF COQUÍ’S TIMING

Limber de China 🍊☀️

Prep: 10 mins
🧊 Freeze: 8 hrs

💡 Taste your mixture before freezing; it should be slightly sweeter than you’d normally drink it since freezing dulls the sugar! 🔊

For the Limber de China (we call oranges in Puerto Rico), the secret is finding the perfect balance between sweetness and citrus. This version is one of the most refreshing treats on the list. It’s like a frozen burst of island sunshine. Ingredients:
    • 2 cups fresh orange juice (mejor si es exprimida natural, «china de la montaña»)
    • 1 cup of water
    • 1 cup White Sugar (ajusta según qué tan dulce esté la fruta)
    • A pinch of salt
        • A bit of orange zest (ralladura de naranja) for a stronger aroma (optional).
  Methods:
    • Mix: In a large pitcher, combine the orange juice, water, sugar, vanilla, and a pinch of salt. Stir well until the sugar is completely dissolved.
    • Taste Test: Try a little bit! Remember that when things freeze, they lose a bit of their sweetness, so it should taste slightly sweeter than you’d normally drink it.
    • Pour: Pour the mixture into your plastic cups (7 oz or 8 oz).
    • Freeze: Place them in the freezer for 6 to 8 hours.
    • Enjoy: Since this is a water-based limber (not creamy), it will have a refreshing, icy crunch.
