Chef Pongo’s Rawon:

An earthy, nutty beef soup from East Java, instantly recognizable by its dark color.

 

Ingredients:

 

    • Beef cubes
    • Keluak (black nuts)
    • Garlic
    • Shallots
    • Turmeric
    • Lime leaves

Methods:

 

    • Sauté the ground keluak nuts with other spices to unlock the dark pigment and nutty flavor.
    • Simmer the beef in the spice broth until tender.
    • Serve with salty duck eggs, bean sprouts, and sambal.
