Sambal Dabu-Dabu

Hailing from North Sulawesi, Sambal Dabu-Dabu is the ultimate refresher. This «raw» sambal is very similar to a spicy tropical pico de gallo, using the natural juices of diced tomatoes and lime to create a clean, sharp heat. It’s the perfect choice when you want a dip that is light, bright, and cooling. This dip can be both dip and salad.   What does it taste like? It is very similar to a spicy tomato salsa. It is clean, acidic, and refreshing, with a sharp bite from the raw chilies and lime juice. Manado Style   Ingredients:  
  • Diced tomatoes
  • Sliced shallots
  • Bird’s eye chilies
  • Calamansi or lime juice
  Methods:  
  • Dice: Cut the tomatoes into small, even cubes (remove the seeds if you want a cleaner look). Thinly slice the shallots and bird’s eye chilies.
  • Toss: In a mixing bowl, combine the tomatoes, shallots, and chilies.
  • Acidify: Add a generous amount of calamansi or lime juice and a pinch of salt.
  • Oil: Add a splash of room-temperature vegetable oil (or coconut oil) and stir well.
  • Marinate: Let the mixture sit for about 10–15 minutes. The salt and lime juice will draw out the natural juices from the tomatoes, creating a bright, spicy dressing.
