Limoncillo

Every Puerto Rican family has that one relative who makes the best homemade blends. For me, it’s my aunt. Her Limoncillo is legendary! It’s tart, sweet, and has just the right amount of kick. It is the perfect drink to keep in the freezer for when unexpected guests drop by during a chinchorreo.

Ingredients:

  • 7 to 10 Large Lemons (Limon del país)
  • 1 bottle (750ml) Puerto Rican White Rum (Don Q Cristal)
  • 1 cup of Sugar (adjust to taste)
  • ½ cup of Water (to create a simple syrup)
  • A few mint leaves or a cinnamon stick for a unique twist. ( optional)

Methods:

  1. Zest & Juice: Peel the lemons carefully (avoiding the white bitter part) and then juice them.
  2. Infuse: In a large glass jar, combine the rum with the lemon peels. Let it sit for at least 24 hours (some people leave it up to a week for a stronger flavor!).
  3. The Sweetener: Make a simple syrup by heating the water and sugar until dissolved. Let it cool completely.
  4. The Blend: Remove the peels from the rum. Mix the infused rum with the fresh lemon juice and the cold simple syrup.
  5. The Freeze: Pour into bottles and keep them in the freezer.Pro Tip: Because of the alcohol, it won’t freeze solid—it will just stay ice-cold and slightly thickened.
  6. Serve: Serve in small shot glasses or over one large ice cube.
