CHEF COQUÍ’S TIMING
Polvorones 🍪✨
⏳ Prep: 20 mins
🔥 Bake: 15 mins
💡 Don’t overmix the dough, or it won’t have that classic crumbly texture! 🔊
- 1 bar (½ cup) Unsalted butter (softened)
- ½ cup Vegetable shortening (like Crisco)
- ½ cup White sugar
- 1 tsp Vanilla extract
- 2 cups All-purpose flour
- ½ tsp Baking powder
- A pinch of salt
- For the center: Guava paste (guayaba), sprinkles, or a chocolate kiss.
- Cream the Fats: In a large bowl, cream together the softened butter and shortening until smooth. Add the sugar and vanilla, and beat until fluffy.
- Add Dry Ingredients: Gradually stir in the flour, baking powder, and salt. Mix until a soft dough forms. (Don’t overmix, or they won’t be as crumbly!)
- Chill (Optional but Recommended): Wrap the dough and refrigerate for 20 minutes to make it easier to handle.
- Shape: Preheat your oven to 350°F. Roll the dough into small balls (about 1 inch) and place them on a parchment-lined baking sheet.
- The Thumbprint: Use your thumb or the back of a small spoon to make a small indentation in the center of each ball. Fill the center with a small piece of guava paste or your choice of topping.
- Bake: Bake for 15–18 minutes. You want them to stay pale on top but be slightly golden on the bottom.
- Cool: Let them cool completely on the tray before moving them—they are very delicate while warm!
