Fry the sausages first to release their flavor before adding the rice! 🔊

If you’re looking for the ultimate ‘quick and delicious’ Puerto Rican meal, Arroz con Salchicha is it. This is the dish every Boricua grew up eating—it’s simple, budget-friendly, and packed with nostalgia. Whether it was a rainy day lunch or a fast family dinner, the combination of savory Vienna sausages, fluffy rice, and that signature sofrito base never fails to hit the spot. It’s a humble classic that tastes like home.   Ingredients:
    • 2 cups short or medium-grain white rice.
    • 1 can of Vienna Sausages (Salchichas)
    • 2 tbsp Sofrito.
    • 1 packet Sazón with Achiote (for that classic orange color).
    • 2 oz Tomato Sauce.
    • 2 ½ cups of water or Chicken Broth.
    • Green olives (optional)
  Methods:
    • Sauté the Base: In a medium pot (caldero), heat 1 tbsp of oil over medium heat. Add the sliced sausages and cook for 2 minutes. Then, stir in the sofrito, tomato sauce, and sazón. Let it cook for another minute until fragrant.
    • Add Rice and Liquid: Pour in the 2 cups of rinsed rice and stir it well so every grain is coated in the orange sauce. Add the 2 ½ cups of water or broth.
    • Boil: Increase the heat to medium-high and bring to a boil. Let it cook uncovered until the liquid has evaporated and you see «craters» forming on the surface of the rice.
    • Steam: Give the rice one gentle stir from bottom to top. Cover the pot with a tight-fitting lid and turn the heat down to low.
    • Cook: Let it steam for 20 minutes without opening the lid.
    • Fluff: After 20 minutes, turn off the heat, fluff the rice with a fork, and serve!
