More than just a snack, Kerupuk (deep-fried crackers) is a mandatory accompaniment to almost every Indonesian meal. Whether it’s a giant, curly white tin cracker (Kerupuk Kampung) or a delicate prawn cracker, it provides the essential texture that completes the dining experience. In Indonesia, a meal without the sound of a crunch is considered incomplete! It can be a snack, dip, or condiment.

 

Ingredients:

 

  • Kerupuk Udang (Prawn) or Kerupuk Kampung (Garlic): 1 pack of raw, dried crackers.
  • Frying Oil: Use a high-smoke point oil like vegetable, canola, or sunflower oil. You will need enough to deep fry (the crackers need to be fully submerged).
  • Paper Towels: Essential for draining excess oil to keep them crispy.

 

Methods:

 

  • Sun-Dry (Optional but Recommended): If your raw crackers have been in the cupboard for a while, lay them out in the sun for 1–2 hours. Removing any trace of moisture ensures they expand to their maximum size.
  • The Temperature Test: Heat the oil over medium-high heat. Drop one small piece of cracker in; if it sizzles and expands immediately (within 2–3 seconds), the oil is ready.
  • Fry in Batches: Do not crowd the pan. Kerupuk expands significantly (sometimes 3–4 times its original size). Fry 2–3 pieces at a time.
  • The Quick Flip: Use a slotted spoon or tongs to keep the crackers submerged. As soon as they have fully expanded and turned a light golden or white color, remove them immediately. This usually takes less than 10 seconds.
  • Drain Vertically: Place them on a wire rack or a bowl lined with paper towels. Let them cool completely before storing in an airtight container to maintain that «snap.»
